This Week’s MENU

One of the biggest timesavers for me has been meal planning each week. Here is another week of yummy meals for you to try! 

Here’s the BACKSTORY if you don’t already know:

Deciding what to feed my family for dinner after a long day at work was something that just kept adding unwanted frustration.  We aren't really ones to grab food out other than the usual Friday pizza night. I found myself constantly scouring the fridge, freezer, & pantry to find ANYTHING I could put together. It became annoying so I made a change. I started planning out our meals for the week on Saturday morning, choosing 3 to 4 meals and making my grocery list.

This little change completely changed my grocery shopping, meal planning mentality.

Crispy Roasted Cauliflower & Creamy Pesto

We went with another one of Tieghan’s recipes this week. Her pasta dishes are just always so delicious. I added some lemon pepper grilled chicken for some protein.

The cauliflower in this one is AMAZING and would honestly make a good side all on its own for another dish!

Chewy Chocolate Peanut Butter M&M Cookies

This is a recipe that goes WAY BACK to my childhood. My mom typically makes the same cookie dough base for one of my all time favorite Christmas cookies.

I changed it up slightly and added some peanut butter M&M’s on top because who doesn’t like a chocolate/peanut butter combo? It is so so simple and a great go to for some quick, yummy cookies! Check out my recipe below.

Recipe

  • 1 pkg. of Devil’s Food cake mix (any brand works)

  • 1/2 cup oil

  • 2 eggs

  • Peanut butter M&M’s

  1. Heat oven to 350. In a mixing bowl, combine cake mix, oil, and eggs.

  2. Drop 2 tbsp. of dough onto an ungreased cookie sheet. Leave about 3 to 4 inches between each cookie.

  3. Bake for 9 to 12 mins.

  4. When they are fresh out of the oven, carefully push a few M&M’s onto the warm cookies.

  5. Let them cool or eat them warm!

My girls helped add the M&M’s when they came out of the oven. The perfect job for little fingers!

BLT Salad

This is another favorite weeknight recipe because it is so simple. The steps and ingredients are pretty basic. I would definitely not skip the dressing. It adds to the flavors of the salad making it taste just like the standard BLT sandwich.

I always make some fresh croutons because its just worth the little bit of extra. I slice up a loaf of fresh French bread and toss the pieces in some olive oil, garlic, Italian seasoning, and a little garlic salt. Bake them at 425° for about 15 minutes for just the right amount of crispy, crunchy, slightly chewy texture. Oh my gosh, SO YUMMY!


BBQ Chicken French Bread Pizza

I shredded some more BBQ chicken in the crock pot over the weekend to add to these French bread pizzas. It seriously made it so much easier to throw together on a weeknight. If you missed my homemade BBQ sauce recipe last week, check it out HERE. This recipe was a HUGE hit in my house for everyone. Plus, leftovers were amazing too!
