This Week’s MENU

One of the biggest timesavers for me has been meal planning each week.  

Here’s the BACKSTORY:

Deciding what to feed my family for dinner after a long day at work was something that just kept adding unwanted frustration.  We aren't really ones to grab food out other than the usual Friday pizza night. I found myself constantly scouring the fridge, freezer, & pantry to find ANYTHING I could put together. It became annoying so I made a change. I started planning out our meals for the week on Saturday morning, choosing 3 to 4 meals and making my grocery list.

This little change completely changed my grocery shopping, meal planning mentality.

Chipotle cheddar Burgers With Corn Fritters

If you love burgers, you’ll love this twist. I’ve made this recipe before and it was a huge hit in our house. Tieghan’s recipes are always so easy to follow and delicious. Definitely do NOT pass up the corn fritters!

These burgers do have a slight kick so I held off on the chipotle peppers for my littles and made tiny ones for them!

BBQ Chicken Loaded Potato Skins

I switched up the flavors in the potato skins and tried them with some BBQ chicken I shredded in the crock pot over the weekend. It made it a quick easy add on and was SO GOOD.

If you are looking for a delicious BBQ sauce with sweet, tangy flavor, try out my homemade recipe. This is one my mom has made for years and my go to with any kind of meat.

This recipe yields about 4 cups.

Skinny Chocolate Chip Cheesecake Bars

I usually make a dessert on Sunday to enjoy throughout the week. These cheesecake bars taste like the real deal, with a few less calories and A LOT easier to make. I’ve tried subbing the chocolate chips for some cherry pie filling before too!


Italian Wedding Soup

It was a cold week in Texas which called for a soup in the line up. This wedding soup is super easy for a quick, weeknight meal. I sub homemade meatballs for store bought and usually make these over the weekend so I can just toss them into the soup nice and quick.
