3 SUMMER Menu Staples

Geez, it’s been a while since I dropped my weekly menu on here.

It’s SUMMER though!

All my fellow teachers out there know that during summer break the weeks pretty much start to bleed together. I love having a few recipes to pull out of my hat without having to give it a whole lot of thought :)

This week I’m sharing 3 of my favorite summer recipes that have become a staple in our home!

I’m talking fresh fruit, veggies & grilled chicken! Keep scrolling for the links & details!

Grilled Sticky Chicken & Beef Kabobs

These were my choice for our Father’s Day BBQ this year and the guys LOVED them! I loaded kabob sticks up with beef and chicken, a rainbow of peppers, zucchini, sweet onions and fresh pineapple chunks! It’s worth noting that the recipe I linked above is really for the incredible sauce :)

I love a tangy & sweet sauce with these because it pairs so well with the veggies, meat and pineapple. I searched a bit until I found one that fit the bill.

This sauce was everything! I did save a little extra to drizzle over AFTER the grill.

If you’ve never grilled kabobs this is a must try. I love how simple they are to put together and how pretty they are to serve!

Grilled Chicken Fajita Board

My taco board was such a hit in our house, I had to try my luck with a fajita board!

Let’s start with the chicken. Our local grocery store sells amazing pre-seasoned fajita chicken and I always take the easy road! If you have a good recipe for fajita seasoning to share, please do in the comments below!

The grill is our best friend in the summer. I sliced some fresh peppers and a sweet onion and threw them on the grill with the chicken!

TIP: Our favorite way to grill veggies is in a wok. You can find the one we have HERE. We use ours ALL summer so it’s totally worth the money!

The big thing with any board is the presentation. This is also my favorite part :)

Our board was pretty basic with tortillas, shredded cheese, lettuce and tomato. I can already think of a big list of additional add-ons for next time!

PS: I did serve the standard chips & queso along side my board too! :)

Crockpot BBQ Beer Chicken Taquitos & Street Corn Salsa

I had to add one of those easy crockpot meals to my top 3 for the lazy summer days! This one 100% made the favorite list.

The sauce on the taquitos is amazing. I love the flavor the beer gives it. The chipotle peppers do give it a slight kick so I went light on it with my kids.

The street corn salsa was my families favorite part so pardon me while I fast forward to that!

I steamed some fresh corn cobs and sliced the kernels off. I really think grilling the cobs would be the only way to make this even better!

I served a big scoop on everyone’s plate along side the chicken taquitos!

(If I’m being completely honest here, these were so delicious there was just no time for pictures of the final product. Sorry for the lack of visuals on this one!😂)

This time of year brings about a whole new schedule for our family and each day is a new adventure. Even with my meals figured out I’m definitely a pro at keeping busy :)
