This Week’s MENU

One of the biggest timesavers for me has been meal planning each week. I love sharing my yummy finds & some of my own recipes to make it easy for you too.

Here’s another week of some kid friendly, easy, & delicious recipes for the week!

Oven Fried Southern Hot Honey Popcorn Chicken

Superbowl Sunday was the perfect evening to give this recipe a try. The cornflakes gave them such a delicious, crispy texture. The sauce did have a little kick to it, so I omitted it for the kids and stuck with just the crispy chicken for them. I served these up with some mashed potatoes and green beans.

Nutella S’mores Bars

Oh my goodness, these were as DELICIOUS as they look. They were really simple to put together too!

This one is definitely going to show up again. My suggestion here...serve them warm! Everyone enjoyed the gooey, chocolatey, marshmallow goodness.

Creamy Roasted Red Pepper Tortellini

I chose this meal for our Valentine’s Day “fancy” dinner. (Read more about that HERE) It did not disappoint.

My choice tortellini is Buitoni Three Cheese Tortellini. There are a few varieties of filling options available too. I served it with a nice salad for starters. We didn’t add a protein but I can imagine some sausage or grilled chicken would be amazing.

Taco Board

We theoretically should have done this one on Tuesday, but who says Thursday’s can’t be for tacos too?!

I put a twist on the traditional way I serve tacos and decided to create a board with all of the fixings. My kids LOVED putting together their own plates.

I prepped the meat for this one over the weekend so it’d be an easy reheat.

I’ve found that homemade taco seasoning just tastes better. We tried out a new recipe and it was SO good. The tomato sauce really was the game changer. Check it out HERE.

I kept our taco board COLORFUL with veggies and toppings. You can definitely get creative with this part depending on what you like on your tacos.

The best part was having everything right in front of you at the table so refilling your plate or replenishing your toppings was super easy!

It didn’t take long for my family to clear the board and their plates.

Taco boards are HIGHLY recommended…any day of the week :)
