It’s been a while since I shared my weekly meal plan so I’m bringing it back this week!

Here are some recipes I tried out!

Butternut Squash & Cheese Stuffed Pasta Shells

This is my absolute FAVORITE ways to prepare stuffed shells. The squash and ricotta filling adds a delicious twist on a traditional recipe!

Butternut squash isn’t something we typically eat in our home. Honestly, the most difficult part of the recipe was cutting and dicing the squash!

I know what you’re thinking. Squash?! Trust me though, roasted and blended with the ricotta and some other cheeses, the shells have a savory & slightly sweet taste that is SO good.

Because the squash is mixed into the cheese filling, there were no yucky faces when I served them! My kids actually asked for seconds with this one :)

Berry Sugar Cookie Cobbler

If you’re looking for an incredibly easy, super sweet, and delicious dessert, this is it. The recipe I linked calls for raspberries, strawberries, and blueberries but I opted for ALL raspberries this time!

I was looking for a fruit recipe this week because we LOVE fruit in our house! I came across this one and the sugar cookie crumble on top made it a must try.

If you’ve never made raspberry pie filling, the steps are the same with sugar, lemon juice, and flour. I ended up using 3 cartons of raspberries to sub for other berries.

The crumble on top is made from a cookie mix pouch. This makes it one of the easiest dessert recipes ever!

The prep is so simple & quick but it does bake for about an hour so make sure you allow for that!

I served it warm out of the oven with a scoop of vanilla ice cream like the recipe calls for.

It is EXTREMELY sweet, but the tart berries compliment it well. I totally could also see this made with fresh peaches in the summer too!

Crispy Italian Chicken & Bacon Salad with Tahini Pesto Dressing and Sourdough Croutons

This one is a mouthful! I love fresh salads so I’m always looking for a different mix of ingredients. I really enjoyed this one!

There is a lot that goes into this salad. My tips? DO NOT skip the pesto tahini dressings OR the homemade croutons. The key to this recipe is following it in its entirety.

I’ll be honest, the prep time says 30 mins but it wasn’t the quickest throw together recipe for me during the week. Either way, it is a salad with a really really REALLY good mix of flavors!

Pork Tacos with Honey Mustard Slaw

Is there ever a week that I don’t include tacos?! There is no recipe link for this one as it’s something I threw together but it’s seriously SO EASY and a go-to in our house.

Okay, the PORK. This is a Sunday crock pot throw together that I love. I usually use a seasoned BBQ pork tenderloin, let it cook on low for about 6 to 8 hours, shred and refrigerate/freeze it until I’m ready to use it. You can really season it however you want but BBQ seasoning paired with the honey mustard slaw is amazing!

The SLAW. I always use a broccoli slaw mix over coleslaw mix because I love green veggies. Either works for this! I use about a half of a bottle of honey mustard dressing to mix in the slaw. The amount depends on your taste so add more or less if you want. I find that letting it sit for a few hours give the slaw time to soak up the dressing!

Lastly, heat up some fresh flour tortillas and top them with the shredded pork & slaw. Oh my gosh, SO GOOD! Leftovers make great weekday lunches too. You’ll find yourself craving this on a weekly basis too! :)


I totally get that finding good recipes can time consuming. I love sharing ones that I’ve had success with.
