This Week’s MENU

Seriously, one of the best things I do every week is MEAL PLAN.

Figuring out what to feed my family after a long day at work is something that added so much frustration and stress.

Pre-planning my meals has helped me become more organized, cook healthier, and save money by buying only the things I need.

Here’s how I do it:

  • I choose 3 dinner recipes & a dessert each week to get us from Sunday to Friday.

  • My big cooking days are usually Sundays. I prep as much as I can so putting the meals together during the week takes less time.

  • I cook enough to have leftovers for a few lunches and 2 additional days of the week.

If you find yourself struggling too, give this a try. I promise it will make you feel more in control and like organization is your superpower!

Grilled Chicken Sandwiches w/ Jack Daniel’s Sauce

The secret is in the sauce with this one. It’s sticky, sweet, savory and just SO good on a piece of grilled chicken.

I found this copycat Jack Daniel’s sauce several years ago and it’s bookmarked in my recipe binder because it is just THAT GOOD.

The recipe makes a lot so I typically 1/2 it for my small family. It’s delicious on beef, salmon, & of course, chicken.

We grilled some chicken, added the sauce & put it on a fresh, toasted onion bun. Served with some sweet potato fries, you have a REALLY good chicken sandwich!

Sticky Ginger Sesame Meatballs

I share a lot of recipes from Half Baked Harvest because they are typically extremely good and easy to follow. This one had “weeknight” in the title so I bookmarked it!

I prepped the meatballs in advance to make it quick to put together on a Monday. I opted for a lean ground turkey over the chicken and they turned out just fine. Served over a nice bed of steamed rice and sprinkled with some fresh, chopped green onion, the meal was one to keep in the recipe book.

Veggies are essential in my meals so I roasted some fresh broccoli to serve with this one!

Peanut Butter Brownies

I’ve had this recipe saved for a while and have been anxious to give it a try.

They are extremely easy & quick to toss together as the base is a box of yellow cake mix. The recipe calls for the addition of chopped peanuts but I skipped them because my kids aren’t a huge fan. I did, however, include the peanut butter chips! They are super sweet, soft & peanut buttery, and a new favorite in my house!

Sheet Pan Lemon Chicken & Sweet Potatoes

Sheet pan recipes always catch my eye for weekday options because of how easy they are to put together. This one had SO MANY different flavors.

A lot of my recipes lately have had sweet potatoes in some way or another. They are full of vitamins, fiber and make a nice healthy weekday lunch!

The avocado goddess sauce, as she calls it, is a MUST for this. I’ll admit I was skeptical looking at the list of things that went into it but I gave it a try. Added to the chicken and potatoes, the sauce was something special. Do NOT skip it, trust me!

Finding good recipes can sometimes be frustrating. I love finding & sharing ones that I’ve had success with.
