Brinner (French Toast & Breakfast!)
Okay, is there anyone who doesn’t absolutely LOVE having breakfast for dinner?! It has been a while since we indulged in a brinner spread, so I went all out on Sunday.
We skipped the pancakes & waffles this time and went straight for the French toast. I’ve made it several different ways before, but this week I found the most delicious recipe.

Add on some hash browns, sausage patties, scrambled eggs and fresh fruit and you have yourself the perfect breakfast…served for dinner :)

Buffalo Chicken Egg Rolls
If you love buffalo chicken dip, these cheesy, crunchy egg rolls are a must try.
I prepped the chicken over the weekend so they were easy to put together during the week.
I shredded the chicken breasts in a crock pot and added the buffalo sauce. I am always a fan of making the sauces. I followed the buffalo sauce recipe on Half Baked Harvest. Scroll to the bottom for the sauce (but for sure check out her buffalo chicken pizza recipe too!)
Note: I halved the sauce recipe to keep the chicken from being too spicy for my kids. It was PERFECT!
Once the eggrolls were together, I put them in the air fryer at 370° for 12 minutes. Keep a close eye on them as they cook fast! We dipped them in some tasty ranch!
Chocolate Chip Cookies
Everyone has their favorite chocolate chip cookie recipe. This one is definitely mine.
Let me first say, I like my cookies big, chocolatey, and VERY gooey. This recipe checks all 3 boxes making it PERFECT in my book.
Just a heads up, you have to chill this dough for 2 to 3 hours prior to baking. The result though, is a thick, gooey, delicious cookie. Trust me, just do it :)
My TIP: I sprinkle these cookies with some sea salt when they’re done baking. If you've never tried this, I highly recommend giving it a go on your next batch of cookies. The sweet & salty experience will be completely worth it.
Cookies straight out of the oven are always the best in my opinion. I usually only make enough cookies to eat at that time and refrigerate or freeze the remaining dough.
Instant Pot Chicken Lettuce Wraps
I pulled out my Instant Pot again for a quick mid week meal. These lettuce wraps came together really quick and were the perfect combination of sweet & spicy.
I typically use Romain leaves for my wraps and serve them with either a stir fry veggie or edamame. I did omit the mushrooms this time. If I’m being honest, I totally missed them on my grocery list! 😂
If you aren’t into the lettuce wrap thing, you could definitely serve this chicken over some fried rice!
