Crockpot French Onion Soup & Salad

Sunday was the tail end of our cold front here in Texas so I chose another soup to start the week. This is a recipe I’ve been making for years now and it never disappoints. I served it with a veggie loaded salad!

The beer in the recipe gives it a good, rich flavor, but if this isn’t your taste or you just don’t have any on hand, you can definitely sub a little extra beef broth for it.

It’s so easy to put together and it cooks all day in a crock pot. The finishing steps in crocks under the broiler melt and crisp up the cheese on top just right.

My kids are definitely not a big fan of this soup (not sure how many kids love onions🙄) so I cooked up some chicken noodle soup for them. They did enjoy that with some of the crispy baguette!

Fruit & Donut Kabobs

This may have been one of my BEST dessert ideas yet! There isn’t anything difficult about putting them together and they certainly satisfy any sweet tooth. Who doesn’t love some fresh fruit and donut holes served with some warm chocolate fudge?!

You can really use any kind of fruit for these kabobs. I chose fresh strawberries and raspberries because they are a popular choice in our house and pair well with the chocolate sauce.

I used bakery donut holes and opted for the powdered sugar and devils food. You could totally go with glazed too!

Dipping choices were EVERYTHING. The fudge paired perfectly with the strawberries and raspberries. The powdered donut holes paired with the strawberry topping mimicked a yummy jelly filled donut.

My girls had a ton of fun dipping the strawberries and donut holes into the sauces. They also enjoyed the kabob sticks once they were empty too :)

I’m telling you, this is a must try. My kids are STILL talking about them a week later.

Instant Pot Chicken Fried Rice

My husband and I both had meetings on Tuesday so I pulled out my Instant Pot for a quick meal. I don’t use it a lot but I do know many people that do.

If you are an avid Instant Pot user, give this recipe a try. It’s loaded with chicken, veggies, and a whole lot of flavor. With everything cut up ready to go, the meal came together in literally 30 mins.

Meatball Subs

Another quick meal this week were some meatball subs. The meatball recipe was wonderful. I did add some grated parmesan cheese to it. I baked them up over the weekend and actually was able to freeze half of them for another time.

They were the perfect cheesy, saucy late week meal!
